  • 1 sliced onion
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 2 tablespoon olive oil
  • 1kg chicken thigh fillets cut into 2cm pieces
  • 3 tablespoon minced garlic
  • 1 tablespoon crushed ginger
  • 3 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon chilli paste
  • 2 teaspoon garam masala
  • 1 large potato cut into small cubes
  • ½ cup thickened cream
  • 1 teaspoon ground cardamom
  • ½ cup greek style yoghurt
  • 1 ½ cup tomato puree
  • basmati rice to serve

  1. Heat the butter and oil in a pan and brown the chicken thighs.

  2. Lower the heat and add the onions, garlic, ginger, coriander, cumin, salt, chilli paste, masala, and cardamom. Cook on the low heat until it becomes fragrant.

  3. Add thickened cream, tomato puree, potatoes and yoghurt. Stir until everything is combined. Cover the pan to allow to simmer until the potatoes are cooked through.

  4. Serve with basmati rice.
